Usually deciding what to cook as the meat dish for a holiday is easy, but then we need fast and easy accompaniments that will complement the taste of the meat. Here is one that is really quick and easy to make and it will go with any meat. It is luxurious and tasty yet easy to make. You only have to take care with the dressing, but if you follow the instruction carefully there should not be a problem.<br/><br/><strong>Fruit Medley</strong><br/><br/><strong>Ingredients:</strong><br/><br/><br/><br/>1 (20 oz.) can pineapple chunks, reserve juice<br/><br/>1/3 C sugar<br/><br/>1 T cornstarch<br/><br/>1 T lemon juice <br/><br/>1/8 t salt<br/><br/>2 eggs<br/><br/>1 ripe banana, sliced<br/><br/>1 C seedless green grapes, halved<br/><br/>1 (11 oz) can mandarin oranges, drained<br/><br/>1 (10 oz.) jar red maraschino cherries, drained<br/><br/>1 C miniature marshmallows<br/><br/><br/><br/><strong>Method:</strong><br/><br/><br/><br/>Place the reserved pineapple juice into a small saucepan.<br/><br/>Whisk in the sugar, cornstarch, lemon juice and salt until smooth.<br/><br/>Place the pan over medium heat and bring to a steady boil.<br/><br/>Stirring continuously, cook the mixture 3 minutes or until the sugar has completely dissolved.<br/><br/>Remove the pan from the heat.<br/><br/>Place the eggs in a separate bowl and beat slightly with a fork.<br/><br/>Pour 2 T of the hot dressing mixture and stir quickly to combine; you do this to prevent the egg from curdling.<br/><br/>Pour the egg mixture into the remaining dressing mixture.<br/><br/>Place the pan back on the stove over low heat and bring to a gentle boil.<br/><br/>Stirring continuously cook the mixture for 2 minutes.<br/><br/>Remove from the heat, pour into a bowl and allow the dressing to cool to room temperature.<br/><br/>In a salad bowl fold together the pineapple chunks, bananas, grapes, oranges, cherries and marshmallows. <br/><br/>Drizzle the cooled dressing into the fruit and toss to combine.<br/><br/><br/><br/>Serving Size: 8<br/><br/>This refreshing fruit medley is easy to make and a hit at many dinners. Serve it over torn lettuce and sprinkle a few chopped pecans over the top for an added treat. If your budget does not stretch far enough for the pecans, sweet basil or parsley will work as well, not too much though, you do not want to kill the delicate taste!<br/><br/>There is one more thing you need to keep in mind with this holiday cooking recipe, do all the preparations in advance except the bananas as they will go brown. Now it will take only a few minutes to slice the bananas and combine all the ingredients. <div><em><strong>Grandma Linda</strong> asked: </em><br/><br/><br/>As we head into Fall, our thoughts turn to entertaining.  It won&#8217;t be long until Thanksgiving rolls around and a month after that it is Christmas.  As Americans, our holiday traditions seem to center around good meals with family and friends.  Whether it is up to you to host the festivities or just to take a dish to a friend or relatives house, here are a couple of old-fashion recipes from my vintage recipe collection.  Both are great for holiday entertaining or just good sit-down family meals.  Festive Yam Souffle is a perfect recipe for the busy host/hostess.  Not only is it tasty but it looks very festive with its garnish of miniature marshmallows, pecans, and maraschino cherries.  The best part?  It can be assembled and refrigerated up to 8 hours in advance of baking!  Winter apricot compote is a delicious recipe for warm fruit that is sure to please.<br/><br/> FESTIVE YAM SOUFFLE<br/><br/>3 eggs<br/><br/>2 tbsp light brown sugar (more if using fresh yams)<br/><br/>2 tsp grated orange peel<br/><br/>1 tsp salt<br/><br/>1/4 tsp nutmeg<br/><br/>3 cans (16 oz each) yams or 6 yams, cooked, peeled and mashed<br/><br/>2/3 cup light cream or milk<br/><br/>2/3 cup chopped pecans<br/><br/>6 tbsp butter, melted<br/><br/>miniature marshmallows for garnish<br/><br/>pecan halves for garnish<br/><br/>maraschino cherry halves, drained, for garnish<br/><br/>As early as 8 hours before baking, beat eggs, sugar, orange peel and seasonings in a large mixing bowl until light and fluffy. Stir in yams, cream, pecans, and butter. Chill in baking dish. Bake at 325 degrees, in a 1 1/2-qt casserole dish for 50 minutes. Garnish by alternating marshmallows, pecan halves, and cherry halves around top of casserole.<br/><br/>WINTER APRICOT COMPOTE<br/><br/>If you are a follower of this blog, you know that several of my recipes are from my mother&#8217;s collection of &#8220;The Workbasket&#8221; magazine.  This now defunct little magazine was the pride of many a rural homemaker when I was a child.  This is another recipe from one of the 1970s &#8220;The Workbasket&#8221; magizine.<br/><br/>2 cans (30 oz each) apricot halves<br/><br/>1 cup apricot nectar<br/><br/>1 1/2 tbsp cornstarch<br/><br/>3 tbsp cold water<br/><br/>1 tbsp curry powder<br/><br/>1/2 cup firmly packed light brown sugar<br/><br/>1 cup dried pitted prunes<br/><br/>1 can (30 oz)pear halves, drained<br/><br/>1/2 cup toasted shredded coconut, optional<br/><br/>Pour 2 cups syrup from apricots into a large skillet. (Use remaining syrup in drinks and desserts.) Add nectar to syrup; boil rapidly until volume is reduced to 1 1/2 cups. Blend cornstarch and water in a large saucepan; stir in curry powder and sugar. Gradually stir in syrup mixture. Simmer mixture, stirring constantly, for 30 seconds. Add prunes and drained apricot and pear halves; simmer uncovered for about 5 minutes or just until heated through. Making your own confections, is easier than you might think.<br/><br/>When it comes to making candy, you need to prepare ahead of time. Read the recipe completely, making sure you have all of the ingredients and equipment needed. Lay out everything that you will need before you begin to prepare the recipe.<br/><br/>Candy Making Tips<br/><br/>How To Crush Peppermint Candies: I find the easiest way to do this is by placing the peppermint candies in a heavy duty zipper close bag. Wrap a clean kitchen towel around the bag, then use a hammer to smash the candies.<br/><br/>Storing Your Homemade Confections: I find it best to store my candy in the refrigerator in an airtight container. If you are worried about sticking, line your container with parchment paper.<br/><br/>Presenting Your Confection&#8217;s As Gifts: Purchase some quality plastic containers, or some round decorative holiday theme &#8216;d tins. If you are using metal tins, line the bottoms with parchment paper. If you are making the Bonbons, purchase mini muffin cup liners. You can place a Bonbon in each liner, this keeps them separated and presentable.<br/><br/>Here are 3 of my favorite Holiday Recipes.<br/><br/>The following recipes do not require the use of a candy thermometer.<br/><br/>Peppermint Marble Bark<br/><br/>6 squares semi-sweet baking chocolate<br/><br/>6 squares premium white baking chocolate<br/><br/>1 c. crushed peppermint candies<br/><br/>Microwave semi-sweet and white baking chocolates in separate microwave-safe bowls, on high for 1 1/2 minutes. Stir until chocolates are completely melted. Stir 1/2 cup of the peppermint candies into each bowl. Alternately spoon melted chocolate onto waxed paper lined cookie sheet. Swirl chocolates together with knife to marbleize. Refrigerate for 1 hour or until firm. Break into pieces.<br/><br/>White Chocolate Fudge with Cranberries<br/><br/>2 pkg. (6 squares each) white chocolate<br/><br/>3/4 c. sweetened condensed milk<br/><br/>1 c. chopped almonds<br/><br/>1/2 c. dried cranberries<br/><br/>1 tbsp. grated orange peel<br/><br/>Line a 8&#8243; square pan with foil, with ends of foil extending over the sides of your pan, set aside. Microwave chocolate and milk in a bowl until chocolate is almost melted. Stir until chocolate is melted. Add almonds, cranberries, and grated orange peel. Stir until blended. Spread chocolate mixture into a prepared pan. Refrigerate for 2 hours until firm. Remove from pan via foil and place on a tray; cut into squares. Store in refrigerator in an airtight container.<br/><br/>Peppermint Bonbons<br/><br/>1 lb. vanilla flavored confectioners coating<br/><br/>1/2 c. whipping cream<br/><br/>1 1/4 tsp. peppermint extract<br/><br/>crushed peppermint candies<br/><br/>In a heavy saucepan, melt confectioners coating over low heat. Remove from heat. Stir in whipping cream and peppermint extract. Beat at high speed with mixer until smooth. Chill in freezer for 25 minutes or until candy is stiff enough to be shaped. Form candy into round balls. Roll balls into crushed peppermint candy pieces. Arrange on a non-stick baking mat; let cool. Placed either in decorative wooden bowl, tied in small bags made from sheer fabric or specially designed pot pourri vase, a potpourri can last long if blended correctly. The word potpourri comes from the French meaning &#8220;rotten pot&#8221;.<br/><br/>Its uses are many. You can use it to perfume the air, keep it in closets or drawers, make room decorations with attractive baskets or bowls or make personal gifts to share it with family and friends. Dry potpourri consists of dried, scented, crisp materials concocted for fragrance as well as beauty.<br/><br/>The basics of potpourris are simple and few. Dried or fresh sweet-smelling plant materials, other aromatic ingredients like whole spices, bits of citrus peels or shavings of pleasant smell wood chips; essential oils and fixative which combines with the essential oils to preserve their fragrance. Aromatic plant materials include rose petals, marigold flowers, foliage, lavender, mints, and fragrant herbs of all kinds. Fixatives fix the aroma i.e. they make the scent or fragrance last longer. They come in dried, powdered or liquid form. Common fixatives are orris root; oak moss, cellulose, and benzoin.<br/><br/>The best herbs for potpourri are lavender, scented geranium leaves, lemon verbena, lemon balm, and mints. Dry them, and then make your own mix. Sprinkle with essential oils to extend the life of the potpourri. By adding a little of this and that you become familiar with the process and begin to creating your own blends.<br/><br/>Choose from variety of themes such as - woody, floral, spicy, fruity or citrus for making a potpourri. Assemble and blend your flowers, herbs, leaves, etc accordingly. Mix the fixative with the spices and sprinkle few drops essential oil for fragrance. Blend well, seal and store in warm dry dark for place for a month or so. Choose pretty containers, jars and bowls, to display.<br/><br/>Below are few common potpourri recipes that any amateur can start with -<br/><br/>Basic Rose Potpourri - Blend 1 tsp of rose essential oil to 3 tbsp coarse ground orris root and let it sit for a few days. If you add 2 tbsp each of ground cloves and cinnamon, the blend will emit a spicy fragrance. 2 cups lavender and ¼ cup ground tonka bean exudes a sweet floral scent. For a musky scent, add 1 cup patchouli leaves and ½ cup sandalwood and vetiver root. For a fruity fragrance, 1 cup each of dried citrus peel, rose, lemon scented geranium leaves works wonders.<br/><br/>Balsam Fir Potpourri - Blend 1 cup balsam needles, ¾ cup sweet woodruff leaves, 1 cup dried violet blossoms, 1 cup lavender, 2 tbsp salt, ¼ cup bee balm blossoms and 1 oz balsam Peru tincture. Shake the mixture occasionally and let it age for a month or so.<br/><br/>To make potpourri as Xmas gift - mix 1 cup each of whole allspice, star anise, ginger root, and sassafras bark, 2 cups each of orange peel, lemon verbena leaves, and rose buds and petals and 30 drops allspice oil. Seal and let set to &#8220;cure&#8221;, shaking occasionally.<br/><br/>For Citrus Blend - 4 cups lemon verbena leaves, 2 cups lemon balm leaves, 2 cups orange mint, 2 cups lemon, lime or orange scented geranium leaves, 1 cup apple mint, 4 cups ground citrus peel, 4 cups marigold or calendula petals, 2 cups orris root, mixed with 1 tbsp orange oil and 1 tbsp lemon oil. This may require that you go to the original reference manual. But thanks be to God, who always leads us in triumph in Christ, and manifests through us the sweet aroma of the knowledge of Him in every place.<br/><br/>(2 Cor. 2:14)<br/><br/>STEP 1:<br/><br/>But Thanks Be To God&#8230;<br/><br/>Your attitude will always determine your altitude. Do you really believe God has good plans for you - to give you a hope and a future? Then you&#8217;d stay thankful.<br/><br/>Take time to reflect on the goodness of God. With all the hustle and bustle of everyday life just stop, take a moment; think about all that God has done for you-His mercy, love, grace poured out in your life. It automatically makes you smile!<br/><br/>He who began a good work in you is faithful to complete it! Know that God is at work! You never know what is just around the corner.<br/><br/>The other day, a man was exuberantly bragging on how much he loved his job and all that God had done for him. I told him how nice it was to hear someone love their job.<br/><br/>He went on to tell me that he didn&#8217;t always love his job. As a matter of fact, in September of the year before he had determined to quit by the first of the year because his background and education limited him so much that the job was a dead-end.<br/><br/>The Lord spoke to this man&#8217;s heart and told him he needed to be more thankful. He decided to go ahead and change his attitude, after all, he was going to quit anyway, so what did he have to lose?<br/><br/>When December rolled around, the man and his thankful attitude receive the position of which he was so ecstatic about in the beginning of our conversation. He has also gotten an 88 percent increase financially.<br/><br/>Later on he found out his name was put up for this position in September - probably about the time he decided to get thankful. In the natural, it took until December for the company to arrange everything for this new position. In the spirit realm it took a heart of gratitude for God to arrange all the details.<br/><br/>The joy of the Lord is our strength. We have to learn not to let circumstances steal our joy. The enemy uses them to deceive you in to thinking that all hope is lost - nothing good will ever come of this - you might as well get down and depressed now because you know this is going to turn out badly.<br/><br/>Let&#8217;s be thankful, knowing that God always leads us in triumph!<br/><br/>STEP 2:<br/><br/>He Always Leads Us In Triumph In Christ<br/><br/>Notice that victory is in Christ-the anointed One. The anointing is the presence and power of God. God&#8217;s highest and best for us is to triumph-to be victorious! That doesn&#8217;t mean the circumstances will always be perfect. We have to fight the good fight of faith-then we win.<br/><br/>The Apostle Paul said he&#8217;d learned how to be content (satisfied to the point where he was not disturbed or disquieted) in whatever state he was in. Paul made it clear he knew how to enjoy plenty and live in abundance. He learned in any and all circumstances the secret of facing every situation.<br/><br/>This is the secret-I have strength for all things in Christ, Who empowers me (I am ready for anything and equal to anything through Him Who infuses inner strength into me.)<br/><br/>He could face anything and everything as long as the Anointed One and His anointing was with Him. Paul knew the secret of the anointing factor-with it he could rise above circumstances and be lead into triumph eventually-without it all hope is lost.<br/><br/>Have you ever noticed the presence of God shows up in worship (a time of thanksgiving)? That presence never comes around when we grumble or worry. The anointing gives us the supernatural advantage for victory so why moan and complain-that just keeps the presence of God at a distance while thanksgiving and worship bring us near.<br/><br/>Come into His presence with thanksgiving-that&#8217;s where we&#8217;ll always be triumphant.<br/><br/>STEP 3:<br/><br/>He Manifests Through Us The Sweet Aroma Of The Knowledge Of Him In Every Place We all believe God is directing our steps as long as we are on the mountain but what about the places that aren&#8217;t so wonderful?<br/><br/>The Holiday season usually means encounters with family members-believers and non-believers. It also gives us opportunities to reach people unlike any other time of year.<br/><br/>At the same time, opportunities will arise to stir up emotions and memories as well. Unfortunately, the devil will use anything and everything to get you to blow your witness in front of unsaved loved ones. He uses others to stir up strife, aggravation, and unforgiveness.<br/><br/>No matter where you are God can use you to be a witness for Him but will you let Him? God can manifest through us the sweet aroma of the knowledge of Him in every place! He has you in that place for a purpose-find the purpose-find the person!<br/><br/>The sweet aroma is the goodness of God that leads men unto repentance. It&#8217;s the sweet aroma of the love of God poured out of your heart towards the unloved and the unlovable.<br/><br/>Holiday preparations include prayer so pray over your time with family. Make the most of these special days; this can be a very special time when their hearts are open to the Lord.<br/><br/>Finally, the joy of the Lord is your supernatural strength and advantage.
