I need a recipe for something in the middle of the table like a roast or fake turkey kind of thing. but vegetarian. and if there is any other veg recipes for x mas id love to hear them.

    A nice pasta dish would work really well you could even add vegetarian sausage

    A baked eggpplant dish would be nice too, or winter squash

    Another option is to do the tofurkey (they say how to cook them on the package)

    Go to the bookstore and get the cookbook “Vegan with a Vengeance” The authors first name is Iza, I don’t remember her last name. My friend is vegan and swears by it. I have written down some of the recipes cuz they are so awesome, and I am definitely a meat eater!

    I made Eggplant Parmesan for some friends on Thanksgiving, and it was a hit!

    Slice the eggplant into half-inch disks
    Lightly salt the eggplant, and brush with olive oil.
    Place them in the oven 350F until golden .
    Arrange the eggplant by layers (about 2-3 disks per serving), so it looks like a little tower.

    Between each layer, add some tomato sauce (I’d say about 1-2 tbs) and some cheese (Mozarella, Ricotta are good examples). You can also get a little funky and add some spinach, or even basil, here. Top the tower(s) with more sauce, bread crumbs (I like toasted garlic breadcrumbs, myself) and Parmesan Cheese.

    Stick it back in the oven ’till the cheese is nice and melted.

    Broiling for about a minute might be a good idea, too, so the cheese gets that ‘au gratin’ look.

    If you eat eggs, Quorn has a REALLY good roast. You could buy and slice up a couple of those.

    If you don’t, I say try a nut roast (i’ve never made or eaten one, so I can’t vouch for taste) or change tradition and make a new dish.

    I know some vegetarians that eat fish… If that’s the case then how about a nice fish dish? Salmon, or maybe tuna steaks? I think a pretty centerpiece dish would be roasted veggie skewers, as long as you picked bright, colorful veggies (mushrooms, zucchini, peppers, pearl onions…)

    Don’t try tofurkey. It’s one of the most disgusting vegan foods I’ve ever had. I tried it last year for Thanksgiving and I threw up. I’m a picky eater so I thought that maybe it was just me. I had the rest of my family try it and they all hated it. I guess if you use gravy it might taste better but I’m never going to try it again. There are a lot of other recipes though. Just google it.

    hey its realy untraditional but they sell vegi burgers and vegi hotdogs those are probly very good . also you may want to try tofu or even a macaroni casarole.

    I have recently been cooking quite alot off of this website. It has some delicious recipes and I am not a cook. It’s really easy to figure it out though. I can’t even boil an egg but I can make these yummy dishes.
    So here’s one for all kinds of holiday vegetarian dishes.
    And here is one for the main courses. There are a wide variety.
    The Pot Pie on here sounds delicious!
    Hope I helped. And if they are vegetarian you can use real butter and dairy but if they are vegan you can’t.

    oh theres soooo many!!!! lets see one is soups, like mushroom or elplant or veggie soup! set it out like a buffet in little bunsen burner pots and the guests will live it!

    also paninis are good. get ALOT of ingredients and everybody can make their own so adults dont have to complain about grilled cheese and kids dont complain about mushrooms or other veggies on their sandwich.

    Last is an orderve. Its a simple block of cream cheese and pour Dant-T’s rasberry chipotle sauce over the entire thing! Serve with crackers! ITS ALL SOOOO YUMMY! I love being a veg head.

    for the middle of the table such as fake turkey i got this recipe off the site called:

    1 cup onion (or shallots), diced
    2 T. safflower oil, plus additional for oiling pan
    1 T. garlic, minced
    2 t. ginger, minced
    4 cups vegetable stock or water
    2/3 cup nutritional yeast flakes
    1/4 cup tamari or soy sauce
    1 T. toasted sesame oil
    1 t. dried thyme
    1 t. rubbed sage
    3/4 t. salt
    3/4 t. freshly ground black pepper
    4 1/2 cups vital wheat gluten
    3/4 cup unbleached flour

    In a non-stick skillet, sauté the onion in the safflower oil, over low heat, for 7 minutes or until lightly browned. Add the garlic and ginger and sauté an additional 2 minutes. Remove the skillet from the heat. Transfer the sautéed onion mixture to a blender or food processor. Add the vegetable stock, nutritional yeast flakes, tamari, toasted sesame oil, thyme, sage, salt, and pepper, and process for 2-3 minutes or until smooth. Transfer half of the wet ingredients to a small bowl and set aside. In a large bowl, place the vital wheat gluten and flour, and stir well to combine. Add some of the remaining wet ingredients to the dry ingredients, stir well to combine, and continue to add the remaining liquid, as needed, to form a firm dough. Using your hands, knead the dough in the bowl for 2 minutes.

    Using a little safflower oil, lightly oil (or spray with a fine mist) a 9×5x3-inch loaf pan. Stretch the dough slightly and then press it into the loaf pan. Pour the half of the reserved wet ingredients over the top of the roast. Bake at 350 degrees for 45 minutes, then remove the loaf pan from the oven and pour the remaining reserved wet ingredients over the top of the roast. Reduce the oven temperature to 325 degrees and return the roast to the oven. Bake an additional 20-25 minutes or until all of the liquid is absorbed and the roast is very firm to the touch. Remove the loaf pan from the oven and set aside for 10 minutes to cool slightly. Transfer the roast to a cutting board and using a sharp knife, cut into slices of desired thickness. Transfer the slices to a large platter for service. Serve with Golden Onion Gravy.

    *Note: leftover seitan roast can be used in your favorite casserole and grain dishes or as a filling for sandwiches or wraps.
    Yield: One 9×5x3-inch roast

    I’m a vegetarian and last Christmas we has a parsnip and sweetcorn lair it was gorgeous!
    All you have to do is
    1. Cut parsnips in to small pieces
    2. mics breadcrumbs and plain yogurt
    3.put a lair of parsnips , sweetcorn and tomato’s in a suitable bowl (with a flat bottom - glass)
    4. Then a lair of the bread crumb mics
    5. repeat this
    6. put and extra lair of bread crumbs on the top
    7. Bake until Golden brown

    * shahi paneer*

    ingredients (Serves: 6)

    250 gm: Paneer (cottage cheese)

    1/4 cup: Beaten curd

    1/2 cup: Milk

    1 1/2 cup: Tomatoes (chopped fine)

    1/2 cup: Onion (chopped into strips)

    1/2″ piece: Ginger chopped fine

    2-3: Green chillies chopped fine

    2-3: Cardamoms (crushed)

    1/2 tsp: Garam masala

    1/2 tsp: Red chilli powder

    2 tsp: Tomato sauce

    3 tsp: Ghee or butter

    Salt to taste
    For Garnish
    2 tsp: Grated paneer

    1 tsp: Chopped coriander

    Method
    Chop paneer into 2″ fingers.
    Heat half the ghee. Add onion, ginger, green chilli and cardamom. Fry for 3-4 minutes. Add tomatoes and cook for 7-8 minutes, covered. Add curd and cook for 5 minutes. Add 1/2 cup water and cool.
    Blend in a mixer till smooth.
    Heat remaining ghee, add gravy and other ingredients except milk and paneer. Boil to get a very thick gravy.
    Just before serving, heat gravy, add milk and paneer fingers and boil for 3-4 minutes.
    Garnish with chopped coriander and grated paneer.

    Speedy Sprouts with Wild Mushrooms

    Ingredients:

    1tbs ground nut oil
    350g large Brussels sprouts, prepared and sliced roughly
    3 shallots (or 1 small onion), sliced
    150g oyster mushrooms, sliced
    1tbs shoyu or light soy sauce
    50ml light stock made with vegan stock powder
    1 1/2tsp (or to taste) mild whole grain mustard
    1tbs balsamic vinegar
    1 tsp cornflour

    Method:

    1.Heat the ground nut oil in a large wok. Stir-fry the sliced sprouts and shallots for about 2-minutes and add the mushrooms. Continue to stir-fry for another minute or two.

    2. Mix together the remaining ingredients and add to the stir-fry. Stir to coat and heat through until the sauce is slightly thickened. Season with a little more stock powder if necessary and serve.

    Twice baked potatoes (without the bacon bits, of course) are really good and easy to make. There are some exellent pasta dishes you can make with vegetables with cheese. Alfreddo! (I’m assuming here your not a vegan). Cheese Lasagna is delicious. The possibilities really are endless, because nowadays every meat dish comes in vegetarian. Vegetarian sausages are great, and so is fake taco meat (for vegie chillie, yum!). I’m only thirteen, so I don’t know very many recipies, but I am a vegetarian who loves food :))
    Try Safeway and Trader Joes.

    Mushrooms are a great replacement for meat. Take some portabella mushroom caps, maybe soak in a sauce, and bake with some peppers and onions. yummy! I still love my meat…but I cooked for a vegitarian xhusband for many years and I know a trick or two. And also…I thought tofukey was pretty good.

    I love this recipe for parsnip mash,as I am a huge parsnip fan.
    It is also very filling(altough it’s not really something for the middle of the table).

    Serves 8

    Ingredients
    75g blanched hazelnuts
    1.5kg medium parsnips
    700g floury potatoes, such as Maris Piper
    75g slightly salted butter
    3 tbsp walnut oil
    100ml vegetable oil, for frying

    Method
    Lightly toast and roughly chop the hazelnuts. Cut 3 of the parsnips in half lengthways, then slice each half into 3 wedges. Cut the potatoes and remaining parsnips into chunky pieces and place in a large saucepan with the parsnip wedges on top. Cover with plenty of cold water.
    Bring to the boil, reduce the heat and simmer gently for 5-6 minutes or until the parsnip wedges have softened slightly. Remove the wedges with a slotted spoon and cook the remaining vegetables for 10-15 minutes. Drain and return to the pan.
    Mash the vegetables in the pan until smooth. Add the butter and walnut oil, and stir until thoroughly combined. Season to taste.
    Heat the vegetable oil in a large frying pan and gently fry the parsnip wedges until golden, turning them frequently to avoid burning. Drain on kitchen paper. Pile the mash onto serving plates and scatter with the hazelnuts.Use Parsnips as a garnish.

    Oh and don’t listen to that person above me,The Bible also states “kindness to animals will be rewarded”…so he should read the bible before he starts preaching his hate messages(he’s a hunter,say no more).
