Looking for a slow cooker recipe for beef chuck ribs?

My tastes lean toward tangy with a bite. I have fallen in love with my slow cooker since I got it for Xmas. But most of the dinners that come out of it are often a bit bland. I like the explosion of smell and burst of flavors however, occasionally, the more subtle nuanced flavors, something you have to look for, BUT THIS IS AMERICAN BEEF FOR CRYIN OUT LOUD. Help a guy out???

This sauce is great for beef, pork AND chicken. Mix it together and put it on the meat, then slow-cook all day:
1 cup brown sugar; 2/3 cup vinegar; 1/4 cup lemon-lime soda (sprite, 7-up, etc); 3Tblsp minced garlic; 2 Tblsp soy sauce; 1 tsp ground black pepper.
Yummy–and drool-worthy as it cooks!

Barbecue Ribs
4 pounds beef chuck ribs or baby back
salt and pepper to taste
2 cups ketchup
1 cup chili sauce
1/2 cup packed brown sugar
4 tablespoons vinegar
2 teaspoons dried oregano
2 teaspoons Worcestershire sauce
1 dash hot sauce
Preheat oven to 400 degrees
Season ribs with salt and pepper. Place in a shallow baking pan. Brown in oven 15 minutes. Turn over, and brown another 15 minutes; drain fat.
In a medium bowl, mix together the ketchup, chili sauce, brown sugar, vinegar, oregano, Worcestershire sauce, hot sauce, and salt and pepper. Place ribs in slow cooker. Pour sauce over ribs, and turn to coat.
Cover, and cook on Low 6 to 8 hours, or until ribs are tender.
Yummy!!!

Cajun Slow-cooked ribs
Ingredients:
1 1/2 pound ribs
2 carrots, sliced
1 clove garlic, minced
1/4 teaspoon pepper
BBQ sauce
cajun seasoning, to taste
Directions:
Combine all ingredients in crockpot. Cover; cook on low for 10-12 hours.
OR
Honey Mustard BBQ Slow Cooked Ribs (for something different!)
Ingredients:
3 pounds beef short ribs
1 tablespoon Dijon-style mustard
1 clove garlic — crushed
1/8 teaspoon freshly-ground black pepper
1 cup bottled hickory-smoked barbecue sauce
2 tablespoons cornstarch
2 tablespoons cold water
Hot cooked noodles
Directions:
Place short ribs in slow-cooker. In medium bowl, combine mustard, garlic, honey, salt, pepper, and barbecue sauce. Pour over ribs. Cover and cook on LOW 6 to 7 hours or until tender. Refrigerate several hours or overnight. Skim any solidified fat from top.
Remove ribs; heat in microwave or conventional oven. Dissolve cornstarch in cold water. Add to sauce from ribs. Cook and stir in microwave or on stovetop until hot and slightly thickened. Pour hot sauce over warm ribs. Serve on cooked noodles.
