Christmas Chocolate Cake

Yumm..who says you can’t have sweet dark chocoloate on Christmas?

 

Chocolate cake:

You will require:

  • 2/3 c. sifted cake flour
  • 1/3 c. unsweetened cocoa
  • 1 1/2 c. sugar, divided
  • 12 large egg whites
  • 1 1/2 teaspoon vanilla extract
  • 1 1/2 teaspoon cream of tartar
  • 1/2 teaspoon salt

Directions:

  • Preheat oven to 375 degrees.
  • Sift flour, cocoa, and 3/4 cup sugar together three times; and keep the mixture aside.
  • Beat egg whites, but make sure that the procedure happens at a low speed. Beat them in a large mixer bowl until foamy, for about 5 minutes.
  • Add vanilla, cream of tartar as well a pinch of salt. Now enhance the speed to medium, while beating the remaining sugar, 1 tablespoon at a time, for 5 minutes.
  • When sugar is mixed well, continue beating to stiff peaks, for 2 minutes or more.
  • Fold one-third of the dry ingredients over whites.
  • Repeat the same procedure two more times until they are blended perfectly.
  • Now you can pour the batter into ungreased 10-inch tube pan.
  • Cut through batter.
  • Bake the cake for 40-45 minutes, until the spring of the top layer backs when gently pressed with fingertip.
  •  Invert pan onto funnel to cool down.
  • Remove from pan.
  • This cake is absolutely fat free. Add powdered sugar or decorate it in your own way.
